In reality, there are few researches that has been done  for this type of  "diet," but the concept of 'shifting' makes sense for the sake of milieu that we create in our body. Eat more alkaline  friendly foods, and you help cultivate an environment for healthy microbes to grow. Eat a more acidic diet that is heavier in fats and proteins, and you create an environment the trouble making microbes like.
