Fermentation is a centuries old tradition of preserving and preparing foods.  It is practiced across many cultures.  Fermentation can be used to create a more richly nuanced menu. Traditional fermentation is a slow process that primarily uses water and salt in varying degrees.  Sometimes the containers used to hold fermented foods may used special leaves or linings to add flavor. Many of these old traditions are now been revived as part of living a healthier lifestyle.
